Repot it in the spring. Right before the buds open. No sense in taking a chance. It can make it another half of a year or so.
That way you can completely wash the roots clean and cut them back with a minimum amount of worry. I would put it in a collander at that time. They are the best way to a rootball that can be cut to size to fit into a bonsai pot. Not to mention the growth you get.

Leave the one you want to be the next section grow.They will thicken up faster if left to their own devices. Maybe wire it into place but that's about it for now. Just take care of it now.
You did the right thing here. Sometimes people are a little nervous when it comes to chopping most of a tree off. You'll be better off in the long run.

The cherry plum is an excellent candidate. Easy to grow from seed and it grows rather quickly.I would look at other prunus with smaller leaves. There are a platoon of smaller plums that aught to fit your needs.
This is (as will be every other prunus) exclusively an outdoors tree.
