Dwarf Peach Tree for Bonsai?

It looks like it does. Chop it at one of those. Get rid of the suckers at the base too.

Sounds great! I chopped the ones at the base and kept all of the branches on the sides below the graft. After work I'm going to chop it below the graft.

Do you think it's too late in the summer to repot it from the nursery pot?

I have diatomaceous earth, perlite, and bark, but I'm wondering if I should do it in regular nursery soil (if I even do it at all).

Repot it in the spring. Right before the buds open. No sense in taking a chance. It can make it another half of a year or so.
That way you can completely wash the roots clean and cut them back with a minimum amount of worry. I would put it in a collander at that time. They are the best way to a rootball that can be cut to size to fit into a bonsai pot. Not to mention the growth you get.

Leave the one you want to be the next section grow.They will thicken up faster if left to their own devices. Maybe wire it into place but that's about it for now. Just take care of it now.
You did the right thing here. Sometimes people are a little nervous when it comes to chopping most of a tree off. You'll be better off in the long run.

I would look at other prunus with smaller leaves. There are a platoon of smaller plums that aught to fit your needs.

This is (as will be every other prunus) exclusively an outdoors tree.
The cherry plum is an excellent candidate. Easy to grow from seed and it grows rather quickly.
 
I have a full size one in my backyard and this spring I discovered a new tree that evidently came up from seed. It is only about four inches tall right now and growing under the parent tree. I may look into moving it next spring. The parent tree has to be sprayed with dormant spray every spring. Interesting looking tree, neat shaped leaves, great flowers, and a mess to keep clean. I had over 700 small peaches that I picked off when they were green. I think I probably have about 50 full size almost ripe peaches about now.
