How long do you leave wire on these?
I have an olive this size too, and wired 1/2 inch branches in spring, removed the wire maybe 3 weeks ago and Ican see how they loose shape now. They were however biting in. Can olive handle wire bites? Or do you see them in 10 years still?

Young branch can heal, old branch with wire scars is more difficult. 1/2” seems like a big branch to wire. Maybe better to cut off and start a new branch.

Easy to heal young branches. I’ll send you a picture when I get home.

It is coming along nicely, now. Once you start getting branches, they develop pretty quickly!
