Looking good. I would also let grow this year. Maybe wire some of the shoots you want to keep towards early summer. Only to get the branch / new leader departing from trunk how you would like. There is a good chance that if you wait much after that the branch will be to stiff to get much movement in.
 
I wouldn't be surprised if you get 4 to 5 ft of growth on each shoot this year.

As soon as the shoots get out of the tender stage I will wire the one I want to keep. Thanks for the advice.

The live oaks in the yard grow about 2-3ft without any care or fertilizer. So yeah I think I will get 4ft with applications of fertilizer every 2 months.
 
the leader of my water oak grew about 7ft last year! Heavy ferts and alot of sun.
 
The weak branch on a major bend did not survive collection but now a shoot comes out at the perfect spot.

Yesterday I moved it to a grow box. I'll take some picture this afternoon. I wasn't able to trim the root as much as I had hope but I did lopped off 5". I probably will wire it this evening. The skeeters came out en masse last night and I had to stop. I sprayed my entire yard this morning before going to work. Hopefully I'll be able to work on the tree tonight.
 
Wiring just started. Couldn't finish tonight. In case you wonder the branches are wired that way because that's how they look around here. The branches tend to be rather long with very gradual taper. They first reach upward then bend down with weight as they grow long and heavy until they touch the ground.

Yeah down here the live oaks are like that. When the heat index stay consistently above 100 deg F, they grow these spiny branches. Soon as the weather cools down and we get some rain those tiny branches start to leaf out and grow like crazy.
 
Question for you guys: At the top of my chop, the tree formed 2 branches (See circle on picture). One quickly grew to be the new apex. The other to be a smaller branch. Is there any risk of developing reverse taper if I decide to keep them both? In the past I've found that if there are 3 or more, the reverse taper will happen. Will it happen at the chop mark with just two? I often see just one at the chop mark and the trunk is carved at the cut to form a taper. Should I cut the lesser branch and do that?

No. Look at forks in branches or branch from trunk;).
 
Clip and grow. Defined the new apex a little more. Left it a little long to make sure.
