Ok, so that would be the main idea.
It won't always go according to the plan, so you might need to adapt and add extra steps.
In some cases you would need to graft.
Also, don't forget to form also back branches, they are very important for the design adding depth

Agree with this basic plan. It's how I develop most deciduous trees here.
Timing depends entirely on how your trees grow. Sometimes step 3 will be the following year, sometimes it may take 2 or 3 years until growth is sufficient to make the chops.

However, I would change the final styling for JM in particular. Weeping branches is not a natural shape for JM. Their natural shape is ascending main branches that then bend outward to form foliage pads. The virt by @clem with ascending main branches is what I would aim towards.

Good point, that wasn't even intentional.
I could tell that something was off when I finished it, but I didn't give it a second though as my son was vehemently asking me to play with him. (He is 1 ½ years old)

I would limit to maximum 2 branches growing from the same point in order to avoid swelling.
Also, you want to consider the distribution of energy from the tree. Right now you want to direct the energy to the new leader and the sacrifice branch. If there are 2 or 3 leaders competing, the one you want might not grow as much.
If you want to keep another branch it might be interesting keeping one of the ones opposite where the leader is, maybe the little bud?

Wasn't that the sacrifice branch? If it is, it doesn't really matter, you can experiment with it

Yeah @Juanmi the one on the right is the sacrifice. But i was just wondering if it would take all the new leaders energy with all those shoots? As the new leader is on its own where the cuff of my jumper is. Will it establish itself as the leader with all those other shoots is what im asking? Or is that down to me? Thanks

Oh sorry, now I get it.
You already pruned a few branches right? The tree has in storage enough energy to grow all the branches there are remaining and the ones you pruned.
If you want to be sur the new leader grows as crazy you could get rid of some of the buds. In any case you can always fix it while it's growing.

Ive been very tempted to cut away some of the shoots from the sacrafice branch as they are going crazy, maybe taking all new leaders growth? But cant bring myself to do it as it looks so good right now. I think im going to wait a couple of weeks in hopes of the new leader taking off.

Change of plan?? Hi guys! @Juanmi I am now thinking of keeping highlighted branch. I have come to like what i think could be. The highlighted branch was originally going to be a sacrifice branch but after seeing it grow and leaf out, i now want to grow the tree bigger than i was aiming to do. So now im going to grow it out this season with no pruning or maybe a little late spring for air flow purposes? Then in Spring next year ill pick which branches to keep for cut and grow. Anyway i was wondering if anyone had any thoughts on this idea? or if there is a reason that the branch should go? In my head the tree will look decent-ish in a few years. Alernatively i could cut where i have marked yellow and work from there? Or i could just stick to the plan and cut the whole branch off come next spring or the spring after? Also the new leader hasnt really become the new leader... apologies for hassling again. It just keeps me up at night atm and would be nice to know your thoughts.

Remembered the reasoning behind taking the sacrafice branch off in the first place. It wont look natural with the long branch without smaller branches coming off (long gap between internodes) back to original plan. Sorry for time wasting
