Opinions on a couple of Olive Bonsai

Hi All,
First post on the forum after spending few weeks reading on Bonsai.
Fascinated by Olives and Bonsai, olive bonsai would be the logical start for me.
Bought these two a year ago,

First one (not sure if it's a Ola Europaea?)
Like the Aerial roots it got but now wondering if they'll blend nicely withthe trunk as it grows or if I should take them out?
Also any advice on how to shape it? I realize it's stilla very young tree and needs years before looking close to some of the ones I see here on the forum but it is just a long term project for me...

And this second one,
A much younger one, was doing very bad at first till few months back when it just sprouted new leaves and started growing, many small branches whos leaves died are still there which I guess I should clean up?
Appreciate any suggestions on how to best shape it?

I live in Lebanon where its mostly a gentle winter Temp down to around 10 Degrees celsius in winter with many days in the 20s with some sun, it could go down to 5-6 degrees on the coldest days... summer is hot and humid between 25-35 degrees celsius is the usual in day time with few days up to 40... When would be the best time to prune, repot and cut leaves?
