A landscaping company recently pulled the thiis. It is 3 weeks into being potted and I know I need to trim foliage but just don’t know where to start…… I have gotten this far on one

Do you mean you want to know which branches to remove to start styling your bonsai?

The foliage forces the roots to work harder, so I would keep that. It's not an unreasonable amount of foliage that your plant has, so I believe it's better to wait and see whatever the plant decides to drop instead of cutting it off yourself.
I have canopies like this in half the pot volume, and if works.

Yes and no. I don’t think the roots will be able to sustain that much foliage. I know

thank you, I initially thought let the plant decide. Another person said thin out big time. I have three. So I now thinned one out, had to cut some branches on another, and it’s cousin above.

I just started attempting to practice the art of bonsai this year. It’s my first attempt at collecting and have watched and read numerous articles but still feel like I’m winging it

Don't worry. I do too at times ;)
You'll get the hang of it soon though

I hear you - there is a lot to take in. I now know I made some mistakes at the beginning. I'm choosing not to work with expensive material because I know there's a lot I don't know 😀 Thankfully the species I'm working with are pretty forgiving.
