Cherry seeds should be viable but it is generally advised to stratify the seeds before sowing. Stratification mimics winter. Many cool climate species have inhibitors that prevent the seed from growing too soon when it might get killed by a cold winter. The cold delayed germination ensures that most won't germinate until after the coldest months.
6-10 weeks in the fridge or sow in a pot and leave them outside through winter to get natural stratification. No need to worry about them germinating in the middle of a cold winter, they have been coping for millions of years without our help and can still manage.
