Where should I cut back to on this field grown Trident maple? The top where it was cut back by the previous owner has a fair amount of inverse taper and I am unsure of where the best place to start a new leader would be.

Chop at the lowest first branch at the right.

If that is too extreme for you, justify it to yourself by air layering whatever pieces you want off the top 😉

Once it develops it is really hard to reverse.
Can you live with it?
Can you hide it with branches or foliage? Still becomes visible in winter though so that's only a partial fix.

Much better to chop somewhere below and grow a new apex.
