I have a little european olive that I want to move to bonsai soil soon, and hopefully get a lot of good growth from over the summer. It's definitely spring, and I know they relish warm weather, days are getting to be between 60-70 fahrenheit or above, but nighttime can still get to the lowish 40s. In May, however, the forecast is looking to start getting a lot warmer a lot faster. Does that sound acceptable for a repot or should I be waiting until the days/nights are warmer? For reference in my area we are about a week away from our traditional last frost date for the year.

I don't think olives care about hot weather. We dig feral olives in Spring and Autumn. They don't seem to care. Repot in real hot weather may require a protected environment for a few weeks while the new roots get started but should still be OK.
Recovery time is shorter when the trees are active. New roots should be established in a week or 2 so no need to worry about weather next month or later.

I've repotted olives in mid summer and it can be over 100 F here. They never miss a beat.
