For hard plastic pots, what is the recommended thickness?

It doesn't matter. Thinner ones tend to oxidize more and break down faster. But as long as they're sturdy, it shouldn't matter much.
 
If you're getting one 3D printed, material is more important.

Use ABS or PET(G). PLA is a no no in the sun.

Thickness probably depends on size and design. How much weight/pressure will be pushing on the walls (could cause delamination of the layers).
