I bought some JM seeds in the summer and they have hit their 120 day cold stratification period. Should I try to germinate them now or leave them in the fridge until spring?

Why did you stratify them during the summer? I’m not sure there’s an easy answer to your question as I often find that they start to germinate in the fridge when their stratification requirements are met. If they’re germinating, you don’t have any choice but to plant them and keep them growing through the winter.
