Caring for ginseng ficus

I’m going to repot my ficus in new soil, however I’m not familiar with a rocky soil like this I have bought bonsai food brand fertilizer granules how often should I add those. Also should I water daily
 
In proper bonsai soil. You can water daily, especially ficus. Hold off fertilizing til you see new growth up top.

Wait to prune til the tree puts on growth and recovers from repot. Youtube Nigel Saunders... he has some very good videos and playlists on ficus. He some old ones.
 
Do not water to a schedule. Only water when the tree needs water. That may be once a day, twice a day or once every 2-3 days and sometimes once a week. It all depends on the season, whether the tree is indoors or outside, how warm you have the room heated, size of pot, size of tree, soil type, wind, etc, etc. You really need to check soil moisture before watering to see if it really needs water.
One way to kill a bonsai is to water every day. If the soil does not get a chance to dry a little in between there's a good chance a root rot fungus can get going in the pot. If the roots get too dry between watering there's a good chance the tree will die from dehydration.
A reliable soil moisture meter is a wooden skewer poked into the soil. Pull it out each day to see if the soil is still wet or has dried out enough to water.
Fortunately most ficus sp are very tolerant so they'll cope with a bit too much water and are reasonably drought hardy so won't die as soon as the soil gets a bit dry.

Ficus love fertiliser but they'll still stay alive without any for years at a time. I'm not familiar with 'bonsai food brand fertilizer granules' and a whole range of products come up when I search that term. Surely the packet has some directions for use??
In the absence of instructions I'd add a few every 4-6 weeks as it sounds like a slow release solid fertiliser.
Some pictures of the pack and/or the granules might be enough for some of us to work out what it is and give better than a wild guess.
