I'm a potter and have "hits" and 'misses". My initial firing for all pieces is at bisque temp.(1800F/1000C). My misses are discarded at this stage. I'm wondering if I could crush the bisque and use as a substitute for akadama?

No. I mean, you could try using it as a substrate (although I would not recommend it) but it’s not going to be very similar to akadama in my opinion.

No. There really aren’t any substitutes for akadama that closely mimic its properties. You could use the crushed ceramic as a substrate component and it will probably perform reasonably well, providing you can achieve some consistency in particle size, but it won’t be akadama and won’t interact with roots in the way akadama does.
