I air layered a linden tree and an acer palmatum a week ago. But I fear I might have been greedy and air layered thick branches. Is the spagnum moss I used enough for the foliage amount?

Yes, I think so. You can also continue to add more sphagnum moss as roots begin to fill the plastic bag.
